Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the peanut butter, sugar, and egg. Mix until the ingredients are fully incorporated and form a smooth dough.
Scoop out spoonfuls of dough and roll them into balls, about 1 tablespoon each. Place the balls on the prepared baking sheet, leaving some space between each cookie.
Press each dough ball lightly with a fork to flatten and create a crisscross pattern on top.
Bake the cookies in the preheated oven for 10-12 minutes or until they are lightly golden around the edges.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use a good quality peanut butter. You can also add a pinch of salt or vanilla extract for extra flavor.
