  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl, combine the peanut butter, sugar substitute, and egg. Mix until the ingredients are fully incorporated and form a smooth dough.
  • Scoop out tablespoon-sized portions of the dough and roll them into balls. Place the balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Use a fork to gently press down on each dough ball to create a crisscross pattern on the top.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Do not overbake as the cookies will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
