Instructions
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy, about 2 minutes.
Add the eggs one at a time, beating well after each addition.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
Fold in the chocolate chips and nuts (if using) with a spatula or wooden spoon.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 9–11 minutes or until the edges are golden brown and the centers look set.
Remove the cookies from the oven and let them cool on the baking sheets for 2 minutes. Then transfer them to a wire rack to cool completely.
Notes
For extra chewy cookies, chill the dough for 30 minutes before baking. You can substitute nuts with dried fruit or omit them entirely.
