Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium mixing bowl, combine the Biscoff cookie butter, granulated sugar, and egg. Mix until the ingredients are well combined and form a smooth dough.
Using a tablespoon or cookie scoop, portion out the dough and roll it into small balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.
Gently flatten each dough ball with the back of a fork, creating a crisscross pattern on top.
Bake in the preheated oven for 8-10 minutes, or until the edges are slightly golden. The cookies will be soft when removed from the oven but will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

For a fun twist, try adding a pinch of cinnamon or a sprinkle of sea salt on top before baking.
