These Buffalo Cauliflower Wings are crispy, spicy, and perfect for a crowd-pleasing appetizer or snack. They are baked instead of fried and tossed in a buttery buffalo sauce for bold flavor.

Instructions 

  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.
  • In a large bowl, whisk together the flour, water, garlic powder, onion powder, salt, and black pepper until a smooth batter forms.
  • Add the cauliflower florets to the batter and toss until each piece is evenly coated.
  • Arrange the coated cauliflower in a single layer on the prepared baking sheet, leaving a little space between pieces.
  • Bake for 20 minutes, flipping halfway through, until the coating is set and lightly golden.
  • While the cauliflower bakes, stir together the buffalo sauce and melted butter in a medium bowl.
  • Remove the cauliflower from the oven and carefully toss the baked florets in the buffalo sauce mixture until well coated.
  • Return the cauliflower to the baking sheet and bake for another 10 to 15 minutes, until crispy at the edges and deeply caramelized.
  • Serve immediately with ranch or blue cheese dressing and celery or carrot sticks, if desired.

Notes

For extra crispiness, avoid overcrowding the baking sheet. You can use plant-based butter to keep the recipe vegan, and serve with your favorite dipping sauce.
