These Cajun dirty loaded fries are piled high with crispy oven-baked fries, seasoned ground beef, melty cheese, and cool sour cream. They make a bold, hearty appetizer or game-day meal with plenty of Southern-inspired flavor.
Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
Toss the cut potatoes with vegetable oil, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon Cajun seasoning until evenly coated.
Spread the fries in a single layer on the prepared baking sheets. Bake for 30 to 40 minutes, flipping halfway through, until crisp and golden brown.
While the fries bake, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5 to 7 minutes. Drain excess fat if needed.
Add the diced onion and bell pepper to the skillet and cook until softened, about 4 to 5 minutes.
Stir in the garlic, tomato paste, Worcestershire sauce, remaining Cajun seasoning, smoked paprika, cayenne if using, remaining salt, and remaining black pepper. Cook for 1 to 2 minutes until fragrant and well combined.
Reduce the heat to low and keep the beef mixture warm while the fries finish baking.
Transfer the hot fries to a serving platter or oven-safe dish. Spoon the beef mixture evenly over the fries.
Sprinkle the cheddar and Monterey Jack cheeses over the top. Return to the oven for 3 to 5 minutes, just until the cheese melts.
Top with sour cream, sliced green onions, and parsley if using. Serve immediately.
Notes
For extra crispy fries, avoid overcrowding the baking sheets. You can also add pickled jalapeños or hot sauce for more heat, and swap the ground beef for ground turkey if preferred.
