Ingredients

  • 2 large eggs
  • 2 slices bacon
  • 2 slices bread
  • 1 tbsp butter
  • 1/2 cup mixed fresh fruit (e.g., berries, melon, or orange slices)
  • salt (to taste)
  • pepper (to taste)
  • cooking spray (or 1 teaspoon oil)

Instructions 

  • Heat a skillet over medium heat and lightly coat with cooking spray or oil.
  • Add the bacon to the skillet and cook for 4-6 minutes, flipping halfway through, until crispy. Remove and place on a paper towel-lined plate to drain excess grease.
  • Crack the eggs into the skillet and cook sunny-side up, scrambled, or to your preferred doneness. Season with salt and pepper. Remove from skillet and set aside.
  • Toast the bread slices in a toaster or on a dry skillet until golden brown.
  • Spread butter on the warm toast and arrange on a plate.
  • Wash and prepare the mixed fresh fruit, then add it to the plate as a refreshing side.
  • Serve the cooked eggs and bacon alongside the toast and fruit for a complete breakfast.

Notes

Feel free to substitute the fruit with your favorite seasonal options. For a healthier twist, use whole-grain bread.
