- Preheat oven to 350°F and line a sheet pan with parchment paper.
- In a stand mixer, beat butter and sugar until light and creamy, about 4 minutes. Gradually add eggs, mixing after each, then stir in vanilla extract.
- Sift together flour, cocoa powder, baking soda, and salt in a separate bowl. Add this dry mixture to the wet ingredients and mix until just combined, scraping the bowl as needed.
- Scoop rounded tablespoons of dough onto the prepared sheet pan.
- Bake for about 9 minutes, or until the edges are crisp and the tops are set.
- Immediately sprinkle hot cookies with coarse sugar or salt and reshape with a spatula if needed. Cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
- Repeat baking with the remaining dough and store cooled cookies in an airtight container at room temperature.
