This easy crock pot chicken pot pie recipe features tender chicken, vegetables, and a creamy savory filling cooked low and slow. It is finished with warm biscuit dough for a comforting, family-friendly meal.

Instructions 

  • Place the chicken breasts in the bottom of a crock pot.
  • Add the diced onion, sliced carrots, sliced celery, frozen peas, cream of chicken soup, cream of celery soup, chicken broth, garlic powder, onion powder, dried thyme, black pepper, salt, and butter.
  • Stir gently to combine the ingredients around the chicken.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and the vegetables are tender.
  • Remove the chicken from the crock pot and shred it with two forks, then return the shredded chicken to the pot.
  • Stir in the milk or heavy cream and mix well. Let the filling cook on low for 15 to 20 minutes to thicken slightly.
  • About 15 minutes before serving, bake the biscuit dough according to the package directions until golden brown.
  • Ladle the chicken pot pie filling into bowls and serve topped with warm biscuits, or split the biscuits and place them on top.

Notes

For a thicker filling, let it cook a little longer after adding the milk or cream. You can also substitute rotisserie chicken if you want to shorten the slow-cooking time, and use either whole milk for a lighter result or heavy cream for a richer filling.
