Instructions
Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
In a large bowl, whisk the granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, milk, and vanilla extract until smooth.
Add the dry ingredients to the wet ingredients and stir gently until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Let the bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For extra flavor, add chopped nuts or chocolate chips if desired. Make sure not to overmix the batter to keep the bread tender.
