These garlic Parmesan soft pretzels are warm, chewy, and baked to a deep golden brown with a savory buttery topping. They make a delicious snack or appetizer with big bakery-style flavor.

  • In a large bowl, combine the warm water, yeast, and sugar. Let sit for 5 to 10 minutes until foamy.
  • Add the flour, salt, and 2 tablespoons melted butter. Mix until a shaggy dough forms, then knead by hand or with a dough hook for 6 to 8 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
  • Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
  • In a large pot, bring 10 cups of water and the baking soda to a gentle boil.
  • Punch down the dough and divide it into 10 equal pieces. Roll each piece into a rope about 18 to 20 inches long and shape into pretzels.
  • Carefully dip each pretzel into the baking soda water for 20 to 30 seconds, then transfer to the prepared baking sheets.
  • Brush the pretzels with the beaten egg.
  • Bake for 12 to 15 minutes, or until deep golden brown.
  • While the pretzels bake, mix the melted butter, Parmesan, garlic, parsley, and salt in a small bowl.
  • As soon as the pretzels come out of the oven, brush or drizzle them with the garlic Parmesan butter mixture.
  • Serve warm for the best flavor and texture.

Notes

For extra flavor, add a little more Parmesan or garlic to the topping right before serving. If the dough feels sticky, dust lightly with flour while kneading, but avoid adding too much so the pretzels stay soft.
