Homemade granola bars that are wonderfully chewy and perfectly crunchy, made from wholesome ingredients.

Ingredients
  

  • 2 cups rolled oats
  • 1 cup mixed nuts, roughly chopped
  • ½ cup shredded coconut, unsweetened
  • ¼ cup chia seeds or flax seeds
  • ¼ teaspoon sea salt
  • ½ cup unsalted butter or coconut oil
  • ½ cup pure maple syrup or honey
  • ¼ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips or dried fruit

Method
 

  1. Preheat your oven to 325°F (160°C). Line your baking pan with parchment paper, leaving an overhang.
  2. In a large mixing bowl, combine rolled oats, chopped nuts, shredded coconut, chia seeds, and sea salt. Stir well.
  3. In a small saucepan over medium heat, melt the unsalted butter (or coconut oil). Stir in maple syrup, brown sugar, and vanilla extract until the sugar dissolves.
  4. Pour the wet mixture over the dry ingredients and stir until well coated.
  5. Fold in chocolate chips or dried fruit if using.
  6. Transfer mixture to the baking pan and press firmly into the pan.
  7. Bake for 25-30 minutes until golden brown. Let cool completely before cutting into bars.
