These Healthy Peanut Butter Oatmeal Cookies are a quick and easy treat made with wholesome ingredients. Perfect for a guilt-free snack or dessert!

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the peanut butter, honey (or maple syrup), egg, and vanilla extract. Mix until smooth and well combined.
Add the rolled oats, baking soda, and salt to the wet mixture. Stir until fully incorporated.
If desired, fold in the dark chocolate chips or raisins for extra flavor.
Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each cookie slightly with the back of a spoon or your fingers, as these cookies won't spread much during baking.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a vegan option, use a flax egg instead of a regular egg. Store cookies in an airtight container for up to a week.
