Preheat your oven to 350°F (175°C) and lightly grease a baking dish or casserole dish with cooking spray or butter.
In a large mixing bowl, combine the cottage cheese, eggs, oat flour, honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix well until smooth and fully combined.
Gently fold in the blueberries, ensuring they are evenly distributed throughout the mixture.
Pour the mixture into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the bake is set in the middle. A toothpick inserted into the center should come out clean.
Remove the dish from the oven and let it cool for 10-15 minutes before serving.
Optional: Garnish with powdered sugar or extra fresh blueberries before serving.
Notes
You can substitute oat flour with almond flour or regular flour if desired. Adjust sweetness by using more or less honey or maple syrup.
