This iced pumpkin chai latte is a cozy, café-style drink made with pumpkin purée, warm spices, and chilled chai tea. It's easy to make at home and can be customized with your favorite milk and sweetness level.
Brew the chai tea and let it cool to room temperature, or chill it in the refrigerator for faster cooling.
In a small saucepan over low heat, whisk together the pumpkin purée, maple syrup or honey, pumpkin pie spice, vanilla extract, and a pinch of salt until smooth and fragrant, about 1 to 2 minutes.
Add the milk and warm the mixture gently for 1 minute, whisking to combine. Do not let it boil.
Remove from the heat and stir in the cooled chai tea.
Fill a tall glass with ice cubes and pour the pumpkin chai mixture over the ice.
If desired, top with heavy cream or a little frothy milk and finish with an extra sprinkle of pumpkin pie spice.
