Instructions
In a microwave-safe mug, mix almond flour, coconut flour, ground cinnamon, baking powder, and erythritol until well combined.
Add the egg, melted butter, vanilla extract, and heavy cream to the dry ingredients. Stir thoroughly until the batter is smooth and no lumps remain.
Place the mug in the microwave and cook on high for 1 minute and 30 seconds, or until the center is set and the cake has risen.
Allow the mug cake to cool for 1-2 minutes before serving. Optionally, top with whipped cream or sprinkle with extra cinnamon for garnish.
Notes
You can substitute erythritol with your preferred keto-friendly sweetener. Adjust cinnamon to taste for a stronger flavor.
