  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  • Pat the wings very dry with paper towels. In a large bowl, toss them with baking powder, salt, black pepper, and garlic powder until evenly coated.
  • Arrange the wings in a single layer on the wire rack. Drizzle lightly with olive oil.
  • Bake for 20 minutes, then flip the wings and continue baking for 20 to 25 minutes more, until crisp, deeply golden, and cooked through.
  • While the wings bake, melt the butter in a small saucepan over low heat. Stir in honey, lemon juice, lemon zest, lemon pepper seasoning, and red pepper flakes if using. Warm just until combined, then remove from heat.
  • Transfer the hot wings to a large bowl and pour the honey lemon pepper sauce over them. Toss until fully coated.
  • Serve immediately while the wings are hot and sticky.

Notes

For extra crisp wings, make sure the chicken is very dry before seasoning and avoid overcrowding the rack. Adjust the amount of lemon pepper seasoning to taste, and skip the red pepper flakes for a milder flavor.
