This loaded baked potato casserole is a creamy, cheesy, bacon-topped side dish that tastes like a classic baked potato in casserole form. It is perfect for family dinners, holidays, or any comfort food meal.

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Place the potatoes in a large pot, cover with cold water, and add 1 tablespoon of salt. Bring to a boil and cook until the potatoes are fork-tender, about 12 to 15 minutes. Drain well.
  • In a large bowl, mash the cooked potatoes until mostly smooth. Stir in the sour cream, cream cheese, milk, melted butter, garlic powder, and black pepper until creamy and combined.
  • Fold in 1 1/2 cups of the cheddar cheese, about 3/4 of the bacon, and about 1/3 cup of the green onions. Taste and add more salt if needed.
  • Spread the potato mixture evenly into the prepared baking dish. Top with the remaining 1/2 cup cheddar cheese.
  • Bake for 20 to 25 minutes, until hot and bubbly and the cheese is melted.
  • Remove from the oven and top with the remaining bacon and green onions. Serve warm.

Notes

For extra flavor, use sharp cheddar cheese and reserve some bacon and green onions for the final topping. The casserole can be assembled ahead of time, covered, and refrigerated before baking.
