These loaded mini potato bites are crispy, cheesy, and topped with bacon, sour cream, and green onions for the perfect bite-sized appetizer or snack. They're easy to make and great for serving warm at parties or as a fun side dish.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and dry the baby potatoes. Cut each potato in half if they are larger than bite-size, then place them in a large bowl.
Toss the potatoes with olive oil, salt, black pepper, and garlic powder until evenly coated.
Spread the potatoes in a single layer on the prepared baking sheet, cut side down if halved.
Bake for 25 to 30 minutes, turning once halfway through, until the potatoes are tender and golden brown.
Remove the baking sheet from the oven and top each potato bite with shredded cheddar cheese and crumbled bacon.
Return to the oven for 2 to 3 minutes, just until the cheese is melted.
