These loaded mini potato bites are crispy, cheesy, and topped with bacon, sour cream, and green onions for the perfect bite-sized appetizer or snack. They're easy to make and great for serving warm at parties or as a fun side dish.

Instructions 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Wash and dry the baby potatoes. Cut each potato in half if they are larger than bite-size, then place them in a large bowl.
  • Toss the potatoes with olive oil, salt, black pepper, and garlic powder until evenly coated.
  • Spread the potatoes in a single layer on the prepared baking sheet, cut side down if halved.
  • Bake for 25 to 30 minutes, turning once halfway through, until the potatoes are tender and golden brown.
  • Remove the baking sheet from the oven and top each potato bite with shredded cheddar cheese and crumbled bacon.
  • Return to the oven for 2 to 3 minutes, just until the cheese is melted.
  • Transfer the potato bites to a serving plate and finish with sour cream and sliced green onions. Serve warm.

Notes

For extra crispiness, make sure the potatoes are in a single layer with space between them. You can swap cheddar for another melting cheese or use turkey bacon if preferred.
