These no-bake energy balls taste like pumpkin pie in a quick, wholesome snack form. They are easy to make, packed with oats, flaxseed, and pumpkin puree, and perfect for a grab-and-go treat.
In a medium bowl, combine the rolled oats, ground flaxseed, pumpkin pie spice, cinnamon, and salt.
Add the pumpkin puree, almond butter, maple syrup, and vanilla extract. Stir until everything is evenly mixed and a thick dough forms.
If the mixture feels too wet, add a little more oats or shredded coconut. If it feels too dry, add a small spoonful of pumpkin puree or almond butter.
Fold in the mini dark chocolate chips if using.
Chill the mixture in the refrigerator for 15 to 20 minutes to make it easier to roll.
Scoop out tablespoon-sized portions and roll them into balls with your hands.
Roll the balls in shredded coconut or extra oats if desired, then place them on a plate or tray.
