A moist and flavorful banana bread made with oats, blueberries, and a hint of cinnamon. Perfect for breakfast or a snack!

Instructions 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the rolled oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  • In a separate medium bowl, mash the ripe bananas until smooth. Add the honey or maple syrup, yogurt, melted coconut oil or unsalted butter, eggs, and vanilla extract. Mix until fully combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  • Fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
  • Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

You can substitute the honey or maple syrup with brown sugar if desired. Frozen blueberries can be used, but make sure to thaw and drain them first.
