Ingredients
  

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 3 cups rolled oats, old-fashioned
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups chocolate chips, semi-sweet or dark
  • Flaky sea salt (optional)

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking pan with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  4. In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chocolate chips gently.
  7. Transfer the dough to the prepared baking pan, pressing it evenly into the pan.
  8. Bake for 25-30 minutes until the edges are golden brown and a skewer comes out with moist crumbs.
  9. Remove from the oven, sprinkle with flaky sea salt if desired, and cool completely on a wire rack.
  10. Once cool, lift the bars out using the parchment overhang, slice into desired sizes, and enjoy.

Notes

Ensure all ingredients are at room temperature for best results. Store bars in an airtight container at room temperature for up to 3-4 days. Freezing is possible for up to 2-3 months.
