These peach crumb bars feature a buttery, tender crust and a sweet spiced peach filling. They are easy to make and perfect for dessert, snacking, or sharing at gatherings.

  • Preheat the oven to 375°F (190°C). Line a 9x13-inch baking pan with parchment paper, leaving a slight overhang for easy removal.
  • In a large bowl, whisk together the flour, granulated sugar, salt, and baking powder. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Add the egg and vanilla extract, then mix until the dough begins to come together. Press about two-thirds of the dough evenly into the bottom of the prepared pan.
  • In another bowl, combine the peaches, lemon juice, cornstarch, brown sugar, cinnamon, and nutmeg. Stir gently until the peaches are well coated.
  • Spread the peach mixture evenly over the crust.
  • Crumble the remaining dough over the peach layer, covering the top as evenly as possible.
  • Bake for 40 to 45 minutes, or until the top is golden brown and the filling is bubbling around the edges.
  • Let the bars cool completely in the pan before lifting out and cutting into squares. For cleaner slices, chill briefly before serving.

Notes

Use very cold butter for the best crumbly texture. If using frozen peaches, thaw and drain them well before mixing to prevent excess moisture in the filling.
