  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a stand mixer, cream the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  4. Add the peanut butter, egg, and vanilla extract, mixing until just combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips with a spatula.
  7. Scoop rounded tablespoons of dough onto the baking sheets, spacing them about 2 inches apart.
  8. Bake for 9-12 minutes until edges are lightly golden and centers are just set.
  9. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
