These classic peanut butter cookies are soft, chewy, and easy to make with just a few simple ingredients.

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
  • Add the egg and vanilla extract to the mixture, and beat until well combined.
  • In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls about 2 inches apart on the prepared baking sheets.
  • Use a fork to flatten each ball slightly, creating a crisscross pattern on top.
  • Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. Be careful not to overbake.
  • Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a crunchier texture, use chunky peanut butter instead of creamy. Store cookies in an airtight container for up to a week.
