Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
Add the egg and vanilla extract to the mixture, and beat until well combined.
In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls about 2 inches apart on the prepared baking sheets.
Use a fork to flatten each ball slightly, creating a crisscross pattern on top.
Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. Be careful not to overbake.
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a crunchier texture, use chunky peanut butter instead of creamy. Store cookies in an airtight container for up to a week.
