These pepperoni cheese crisps are a quick, crispy, low-carb snack made with a simple seasoned cheese blend and pepperoni. They are perfect for serving warm as an easy appetizer or savory bite.

Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat it with cooking spray.
In a small bowl, mix the mozzarella, cheddar, Italian seasoning, garlic powder, and Parmesan cheese.
Spoon 1 to 2 tablespoons of the cheese mixture onto the prepared baking sheet for each crisp, spacing them a few inches apart.
Place 1 pepperoni slice on top of each cheese mound, pressing it in slightly so it sticks.
Bake for 6 to 8 minutes, or until the cheese is melted, bubbly, and the edges are golden brown.
Remove from the oven and let the crisps cool on the baking sheet for 3 to 5 minutes so they firm up.
Carefully transfer to a plate and serve warm or at room temperature.
Notes
For extra crispness, let the cheese crisps cool fully before serving. If desired, use turkey pepperoni for a lighter option.
