These pumpkin protein energy balls are a quick, no-bake snack packed with oats, protein powder, and warm pumpkin spice flavor. They are easy to make, customizable, and perfect for grab-and-go snacking.

Instructions 

  • In a large bowl, combine the oats, protein powder, chia seeds, pumpkin pie spice, cinnamon, and salt.
  • Add the pumpkin purée, nut butter, and maple syrup. Stir until the mixture starts to come together.
  • If the mixture seems too dry, add milk 1 tablespoon at a time until it is thick and scoopable. If desired, fold in mini chocolate chips or chopped nuts.
  • Chill the mixture in the refrigerator for 10 to 15 minutes to make it easier to roll.
  • Scoop and roll the mixture into 1-inch balls using your hands.
  • Place the energy balls on a lined plate or tray and refrigerate for at least 20 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator.

Notes

For the best texture, adjust the milk slowly so the mixture stays thick enough to roll. Store chilled and enjoy within a few days for the freshest flavor. You can swap almond butter for peanut butter and use either chocolate chips or chopped nuts for mix-ins.
