These no-bake pumpkin spice energy bites are chewy, naturally sweet, and full of cozy fall flavor. They make a quick snack or grab-and-go breakfast with wholesome ingredients and a touch of chocolate.

Instructions 

  • In a large bowl, combine the oats, ground flaxseed, pumpkin pie spice, and salt.
  • Add the almond butter, pumpkin puree, honey or maple syrup, and vanilla extract. Stir until the mixture is evenly combined and thick.
  • Fold in the mini chocolate chips.
  • Chill the mixture in the refrigerator for 15 to 20 minutes if it feels too soft to roll.
  • Scoop out about 1 tablespoon of the mixture at a time and roll into bite-sized balls with your hands.
  • Place the energy bites on a parchment-lined plate or baking sheet.
  • Refrigerate for at least 30 minutes before serving to help them firm up.

Notes

If the mixture feels too sticky to roll, chill it a little longer or add a spoonful more oats or flaxseed. Store the energy bites in an airtight container in the refrigerator for up to 1 week.
