These no-bake pumpkin spice energy bites are chewy, naturally sweet, and full of cozy fall flavor. They make a quick snack or grab-and-go breakfast with wholesome ingredients and a touch of chocolate.
In a large bowl, combine the oats, ground flaxseed, pumpkin pie spice, and salt.
Add the almond butter, pumpkin puree, honey or maple syrup, and vanilla extract. Stir until the mixture is evenly combined and thick.
Fold in the mini chocolate chips.
Chill the mixture in the refrigerator for 15 to 20 minutes if it feels too soft to roll.
Scoop out about 1 tablespoon of the mixture at a time and roll into bite-sized balls with your hands.
Place the energy bites on a parchment-lined plate or baking sheet.
Refrigerate for at least 30 minutes before serving to help them firm up.

If the mixture feels too sticky to roll, chill it a little longer or add a spoonful more oats or flaxseed. Store the energy bites in an airtight container in the refrigerator for up to 1 week.
