  • In a medium saucepan, combine the sugar, water, pumpkin purée, pumpkin pie spice, and salt.
  • Set the pan over medium heat and whisk until the sugar dissolves and the mixture begins to steam, about 3 to 5 minutes.
  • Reduce the heat to low and simmer gently for 5 minutes, whisking often, until the syrup is fragrant and slightly thickened.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • Let the syrup cool for 10 to 15 minutes, then strain it through a fine-mesh sieve into a jar or bottle if you want a smoother syrup.
  • Allow the syrup to cool completely before sealing and refrigerating.

Notes

For the smoothest syrup, strain it after cooking. Store refrigerated in a sealed jar or bottle and shake before using if any settling occurs. Use it in coffee, lattes, pancakes, waffles, or over ice cream.
