  • In a small saucepan, combine the water, sugar, pumpkin puree, cinnamon, ginger, nutmeg, cloves, and salt.
  • Set the saucepan over medium heat and whisk until the sugar dissolves and the mixture begins to steam.
  • Bring the syrup to a gentle simmer, then reduce the heat to low and cook for 5 to 7 minutes, stirring occasionally, until slightly thickened.
  • Remove the pan from the heat and stir in the vanilla extract.
  • Let the syrup cool for 10 to 15 minutes, then strain it through a fine-mesh sieve if you want a smoother syrup.
  • Transfer the syrup to a clean jar or bottle and refrigerate until ready to use.

Notes

For a smoother syrup, strain it after cooking. Store in a sealed jar or bottle in the refrigerator and shake before using if needed.
