Tender carrots are slow-cooked in a buttery maple brown sugar glaze with warm cinnamon and a touch of vanilla. This easy side dish is sweet, savory, and perfect for holidays or weeknight dinners.
Add the carrots to the slow cooker in an even layer.
In a small bowl, whisk together the maple syrup, brown sugar, melted butter, cinnamon, salt, and black pepper. Pour the mixture over the carrots and toss gently to coat.
Cover and cook on LOW for 3 to 4 hours or on HIGH for 1 1/2 to 2 hours, until the carrots are tender but not mushy.
About 10 minutes before serving, stir the vanilla extract into the carrots.
If you want a thicker glaze, stir the cornstarch and cold water together in a small bowl, then mix it into the slow cooker. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce thickens slightly.
Serve warm, spooning the glaze over the carrots. Garnish with chopped parsley if desired.
Notes
For extra flavor, use freshly peeled carrots and avoid overcooking so they stay tender with a little bite. If you prefer a less sweet glaze, reduce the brown sugar slightly.
