  • Add the carrots to the slow cooker in an even layer.
  • In a small bowl, whisk together the maple syrup, brown sugar, melted butter, cinnamon, salt, and black pepper. Pour the mixture over the carrots and toss gently to coat.
  • Cover and cook on LOW for 3 to 4 hours or on HIGH for 1 1/2 to 2 hours, until the carrots are tender but not mushy.
  • About 10 minutes before serving, stir the vanilla extract into the carrots.
  • If you want a thicker glaze, stir the cornstarch and cold water together in a small bowl, then mix it into the slow cooker. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce thickens slightly.
  • Serve warm, spooning the glaze over the carrots. Garnish with chopped parsley if desired.

Notes

For extra flavor, use freshly peeled carrots and avoid overcooking so they stay tender with a little bite. If you prefer a less sweet glaze, reduce the brown sugar slightly.
