  • In a large bowl, mix the softened cream cheese and sour cream until smooth and well combined.
  • Stir in the smoked Gouda, cheddar, half of the crumbled bacon, green onions, garlic powder, smoked paprika, black pepper, and salt.
  • Spread the mixture evenly into the prepared baking dish.
  • Top with the remaining bacon.
  • Bake for 20 to 25 minutes, or until the dip is hot, bubbling around the edges, and lightly golden on top.
  • Let the dip rest for 5 minutes before serving. Serve warm with crackers, toasted bread, pretzels, or cut vegetables.

Notes

For extra flavor, use freshly shredded cheese instead of pre-shredded. If you want a little heat, add a pinch of cayenne pepper or diced jalapeños. Serve immediately for the best texture.
