This rich and creamy smoked gouda bacon dip is packed with savory cheese, crispy bacon, and a hint of smoky spice. It is baked until hot and bubbly, making it a perfect appetizer for parties, game day, or casual gatherings.
Preheat the oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish or a small oven-safe skillet.
In a large bowl, mix the softened cream cheese and sour cream until smooth and well combined.
Stir in the smoked Gouda, cheddar, half of the crumbled bacon, green onions, garlic powder, smoked paprika, black pepper, and salt.
Spread the mixture evenly into the prepared baking dish.
Top with the remaining bacon.
Bake for 20 to 25 minutes, or until the dip is hot, bubbling around the edges, and lightly golden on top.
Let the dip rest for 5 minutes before serving. Serve warm with crackers, toasted bread, pretzels, or cut vegetables.
Notes
For extra flavor, use freshly shredded cheese instead of pre-shredded. If you want a little heat, add a pinch of cayenne pepper or diced jalapeños. Serve immediately for the best texture.
