These S'more Bars combine a buttery graham cracker crust with melted chocolate and toasted marshmallows for a gooey, campfire-inspired treat. They are easy to make and perfect for sharing.
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a medium bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt.
In a separate large bowl, mix the melted butter and brown sugar until combined. Stir in the egg and vanilla extract.
Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Press about two-thirds of the dough evenly into the prepared pan to form the crust.
Sprinkle the chocolate chips over the crust, then top with the mini marshmallows in an even layer.
Crumble the remaining dough over the marshmallows and sprinkle with chopped graham crackers or extra crumbs.
Bake for 20 to 25 minutes, or until the top is golden brown and the marshmallows are puffed and lightly toasted.
