These S’mores Cookie Bars combine a chewy cookie base with graham cracker crunch, melted chocolate, and gooey marshmallows for a fun campfire-inspired treat. They are easy to make and perfect for sharing.
Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold in 1 cup of the chocolate chips.
Press about two-thirds of the cookie dough evenly into the prepared pan.
Sprinkle the graham cracker pieces over the dough, then top with the remaining chocolate chips and the mini marshmallows.
Dollop the remaining cookie dough over the top and gently spread or press it as evenly as possible; some marshmallows and chocolate may still peek through.
Bake for 25 to 30 minutes, or until the top is golden brown and the center is set.
Let the bars cool completely in the pan before lifting out and cutting into squares.
Notes
For the cleanest cuts, chill the bars after cooling completely before slicing. If desired, lightly toast the marshmallow topping under the broiler for 1 to 2 minutes at the end, watching closely to prevent burning.
