Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
For the optional glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled cookies and let it set before serving.
Notes
For best results, use pure pumpkin puree and not pumpkin pie filling. Adjust the glaze consistency by adding more milk or powdered sugar as needed.
