These retro chocolate peanut butter buckeyes are shaped like little footballs for a fun Super Bowl party treat. Creamy peanut butter centers are coated in chocolate and finished with optional laces for a playful game-day look.
In a large bowl, beat the peanut butter, softened butter, vanilla extract, and salt until smooth and creamy.
Gradually mix in the powdered sugar until a thick, moldable dough forms.
Shape the mixture into small football ovals, about 1 tablespoon each, and place them on a parchment-lined baking sheet.
Chill the shaped peanut butter footballs in the refrigerator for 20 to 30 minutes, or until firm.
Melt the chocolate chips with the coconut oil or shortening in a microwave-safe bowl in 20-second intervals, stirring between each interval until smooth.
Using a fork or dipping tool, dip each chilled peanut butter football into the melted chocolate, leaving a small strip of peanut butter exposed down the center to resemble a football.
