Instructions
In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, and honey. Mix thoroughly until well combined.
Add the vanilla protein powder, pumpkin spice mix, and ground cinnamon to the bowl. Stir until the mixture is uniform in texture.
If desired, fold in mini chocolate chips and chopped nuts for added flavor and texture.
Using clean hands or a small scoop, roll the mixture into bite-sized balls, approximately 1 inch in diameter.
Place the protein balls onto a lined baking tray or plate. Refrigerate for at least 30 minutes to firm up before serving.
Store the protein balls in an airtight container in the refrigerator for up to one week.
